Ingredients
- 1 red bell pepper, chopped 
- 1 orange bell pepper, chopped 
- 2 large carrots, sliced 
- 2 scallions, chopped 
- 1 cup broccoli, chopped 
- 12 oz chicken breast (about 2–3 breasts), chopped 
- 2 Tbsp tamari or low-sodium soy sauce 
- 1 tsp garlic, minced 
- 2 tsp maple syrup 
- 2 tsp ginger, grated 
- 2 tsp olive oil 
Directions
Prep:
- Preheat oven to 375°F. 
- Chop peppers, carrots, green onions, broccoli, and chicken. 
- Mince garlic and ginger. 
- In a small bowl, whisk together tamari, garlic, maple syrup, and ginger. 
Make:
- On a lined sheet pan, toss chicken with olive oil and bake for about 15 minutes. 
- Remove from oven and add the chopped veggies to the same pan. 
- Pour the sauce mixture evenly over the chicken and veggies. 
- Bake for an additional 20 minutes, or until the chicken is cooked through (internal temperature of 165°F). 
- Serve warm — perfect on its own or over brown rice or cauliflower rice.
