3 Healthy Fourth of July Recipes for Your Summer Cookout
The Fourth of July is one of our favorite summer holidays.
It's a chance to gather with friends and family, enjoy time outdoors, and share good food. If you're looking for a few recipes that are a little different from the usual cookout fare, these three options are fresh, colorful, and easy to prepare ahead of time.
Watermelon & Feta Mini Skewers
Sweet, salty, and incredibly refreshing.
Ingredients
¼ seedless watermelon, cubed
½ cup feta cheese, cubed
4 small skewers
Directions
Alternate watermelon and feta on skewers.
Optional: drizzle with balsamic glaze.
Serve chilled.
Greek Pasta Salad
A light and flavorful side dish that pairs perfectly with grilled foods.
Ingredients
8 oz brown rice pasta shells, dry
2 tbsp extra virgin olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
Sea salt and black pepper, to taste
1 cup cherry tomatoes, halved
1 cucumber, quartered and sliced
½ cup pitted Kalamata olives
Directions
Cook pasta according to package directions. Drain, rinse well, and allow to cool.
In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
In a large bowl, combine pasta and dressing.
Add tomatoes, cucumber, and olives.
Toss well and serve.
Balsamic Beet Dip
A colorful appetizer that adds something unique to the cookout table.
Ingredients
4 medium beets, peeled and cubed
1 yellow onion, sliced
4 garlic cloves, peeled
1 tsp sea salt, divided
2 tbsp extra virgin olive oil, divided
¼ cup water
2 tbsp balsamic vinegar
Chopped parsley, optional
Directions
Preheat oven to 400°F.
Place beets, onion, and garlic on a large piece of foil or parchment paper.
Season with half the salt and half the olive oil.
Wrap tightly and bake for 40–45 minutes, or until beets are tender.
Transfer roasted vegetables and juices to a blender.
Add water, balsamic vinegar, remaining salt, and remaining olive oil.
Blend until smooth and creamy.
Chill and garnish with parsley before serving.
